Amazing Cauliflower Fried Rice

This is an awesome alternative to eating rice and another great way to eat lots more vegetables. This recipe has lots of different colors and textures sure to be pleasing to any palate; even your kids will love this one. Thanks to The Healthy Hippie Mamma for providing the instructions to this mouth-watering Paleo and vegetarian meal of cauliflower fried rice. Note that peas have been added to this particular recipe and if you are following a strict Paleo diet then these are optional and alternatively you might add another green like broccoli if you wish or leave out completely. Now let’s get cooking!


  • 1 Onion (chopped)
  • 2-3 Celery stocks (chopped)
  • Peas (do not use if your strict Paleo)
  • 1 head of Cauliflower (grated to rice like texture)
  • 3 Carrots (chopped into small pieces)
  • 2 eggs
  • Coconut oil
  • Salt (to taste)
  • Pepper (to taste)
  • Garlic powder (to taste)
  • Liquid aminos (Braggs or Coconut) (to taste)


Step 1: chop and grate cauliflower

After washing your cauliflower head, chop it up into smaller pieces and add to your Vitamix. Start by adding about half the head of cauliflower to ensure you are getting the right texture and then add the remainder to it. Start pulsing until you have a fine grated texture like rice. If you don’t have a Vitamix use a high speed blender or alternatively a cheese grater.

Step 2: prepare skillet

Add a few tablespoons of coconut oil to your skillet and melt it down.

Step 3: add celery, onion and spices

To the warmed skillet add your previously chopped celery and onion and sauté.  Add some fresh ground pepper to taste. Sprinkle with salt and garlic powder to taste.

Step 4: add carrots

Once the onion and celery mix is sautéed add your chopped carrots and continue cooking. Optional (not recommended for strict Paleo diets) add about a handful of peas to the mix and stir.

Step 5: add cauliflower

To your sautéed mix of vegetables add the head of cauliflower. Stir with a wooden spoon until everything is well mixed. You may find that you have to add some more coconut oil at this time. Give a few more stirs just while the cauliflower begins to cook.

Step 6: adding the eggs

Crack and add the eggs into the mix. Stir again with a wooden spoon until thoroughly mixed together.

Step 7: add liquid aminos

Adding liquid aminos gives this recipe more of an authentic fried rice taste. Liquid aminos are a healthier soy sauce alternative. Drizzle the aminos on top of your vegetable mixture, adjust the amount to your taste and give a final stir through.

Step 8: read to serve

Your recipe of cauliflower fried rice is now ready to serve. Immediately place onto plates and eat hot. Enjoy!
