A great recipe for anyone who is looking for creative ways to up your potassium without having to drink a green smoothie. This dish can be used as a main dish or as a side dish to a more substantial meal. This recipe is low fat, low carb and low protein as well as being Paleo and Vegan. - 1 medium cauliflower
- 2-4 tbsp soy sauce
- Frozen mixed vegetables
- Ginger (fresh or powder)
- Sesame seed oil
Step 1: prepare cauliflower
Cut cauliflower into chunks and in batches pulse with a food processor into rice sized pieces.
Step 2: prepare onion, garlic and ginger
Chop onion and garlic into small pieces. Grate the ginger, then sauté these in oil for a few minutes.
Step 3: mix everything
Add in the cauliflower rice and add soy sauce to taste and about a half bag of frozen mixed vegetables. Stir and sauté for another 5 minutes. Serve and enjoy.
As mentioned this recipe can easily be enjoyed on its own. Feel free to add other ingredients to your taste of Asian rice recipes. This is a very high fibre meal which can also use this as a side dish to many other types of protein meals or perhaps as a filling into spring rolls. Enjoy!
