Delicious Paleo Blueberry Muffins

Ingredients

  • 1/2 cup butter or coconut oil, melted
  • 6 eggs
  • 1 tsp pure vanilla extract
  • 1/4 cup maple syrup
  • 1/2 cup coconut flour
  • 1/2 tsp sea salt
  • 1/4 tsp baking soda
  • 1 cup fresh blueberries (better with more!)

Directions

Preheat to 350 degrees. Cook time 35 minutes.

Step 1: line muffin pan

Using parchment muffin liners and place one in each muffin slot. You will want to use parchment muffin liners otherwise these muffins will stick to your pan.

Step 2: preheat oven

Start by preheating your oven to 350F and then melt your coconut oil or butter for use.

Step 3: bring all cold ingredients to room temperature

Before using bring eggs and other cold items to room temperature because if you don’t then the coconut oil mixed in later will turn clumpy and harden from the coldness.

Step 4: mix dry ingredients

In a second bowl, add the coconut flour, baking soda and salt, mix dry ingredients slightly.

Step 5: wet ingredients

Crack the eggs in a large bowl, whisk together. Stir in the coconut oil and whisk once more. Now add the maple syrup (adjust amount to taste), and the vanilla extract. Give the mixture one last good whisking. If your coconut oil has harden or become clumpy, you can pop into the microwave for a few seconds to melt it down again.

Step 6: combine ingredients

Add your dry ingredients to the wet ingredients by sprinkling lightly over top or using a sifter. Mix ingredients together using your whisk.

Step 7: add blueberries

Final step is to add blueberries into the mixture. This recipe calls for 1 cup but you can feel free to adjust to taste and add more than the noted amount. Stir blueberries into mixture using a spoon.

Step 8: prepare for oven

This recipe will make 12 muffins. Using a spoon fill each muffin tin to about 3/4 full. Put muffin pan into the oven for about 35 minutes until lightly golden brown.

Once they are done, remove from the oven and serve warm with butter or you can eat cold. These muffins look like ordinary muffins however they have a slightly wetter texture to them.Enjoy!
