- 3 large sweet potatoes (roasted in the oven)
- Leftover chicken
- Leftover caramelized onions
- 1 cup of your favorite homemade or store-bought BBQ sauce
- Salt (to taste)
- 1 cup Coconut milk
- Pepper (optional, if your BBQ sauce isn’t spicy enough)
Preheat oven to 375 F
Step 1: prepare sweet potato shells
Take the pre-roasted sweet potatoes and cut into halves, lengthwise. Then hollow out the insides using a spoon, leaving a little bit of an edge to provide structure for the filling. Place onto a tinfoil lined baking sheet.
Step 2: blend the sweet potato
Blend the sweet potato that you removed from the shells, add salt and coconut milk and mix thoroughly using a hand mixer. The final result will not be completely smooth but rather slightly chunky.
Step 3: prepare the stuffing
In the bowl of blended sweet potato add your leftover chicken, breaking it apart slightly as you go along. Next add your caramelized onions and about 1 cup of BBQ sauce. Stir ingredients together well using a spoon.
Step 4: fill sweet potato shells
Using a spoon, scoop the sweet potato stuffing mixture into each shell until you create a nicely filled mound inside each shell. Any leftover stuffing mixture can be eaten by itself or evenly divided into the shells even if slightly overstuffed. Pour a little more BBQ sauce on top of each shell just before placing into the oven.
Step 5: bake in oven
Place the baking sheet into your preheated oven at 375 F for about 20-25 minutes until everything is heated through.
Step 6: chill or serve
If you are preparing these for a meal in advance and plan to put them in the fridge overnight, then add about another 5 minutes of cook time to ensure sweet potato has reached the proper internal temperature. Otherwise simply scoop each stuffed sweet potato using a spatula onto a plate and enjoy hot!! Be careful as they are delicate and also very hot!
