This is a very simple and easy to make recipe that is also Paleo friendly and low carb. At first these may seem really strange however since you aren’t eating all the processed foods, you will feel less bloated. These pancakes are great at breakfast or anytime you need a small snack. Note if your bananas are ripe enough you don’t need the honey, and you can also use stevia or any other sweetner but using raw honey keeps it true to the Paleo rules. - 1 egg
- 2 tbs almond butter (or coconut oil)
- 2 ripe bananas
- Ground Cinnamon (optional)
- Raw Honey (as sweetner or topping)
Step 1: Prepare bananas
Peel bananas and mash in bowl with fork. Little lumps are ok.
Step 2: Create the batter
Add egg and 2 tbs almond butter (or coconut oil) and sprinkle cinnamon to taste. Add some honey for sweetness (optional, as you can put honey onto pancakes later).
Step 3: Blend
Mix with fork until well blended. It will still have small banana lumps.
Cooking Instructions :
Step 1: Prepare frying pan
Heat pan on low and add little coconut oil for frying.
Step 2: Cook pancakes
Scoop batter onto frying pan and make pancake size round shapes. Brown until they begin to bubble. Flip them over on the other side and brown again.
Step 3: Serve
Serve with butter and raw honey as toppings.
