Grab and Go Omelette Muffins

This is an easy to prepare in advance breakfast brought to you by Allrecipes. When time is limited these Paleo Omelette Muffins sure do come in handy. This recipe makes 8 healthy muffins. Other alternative ingredients you may want to experiment with are zucchini, broccoli, kale and carrots. Make up a batch or two today and put them in your fridge or freezer for handy, easy grab n go breakfasts all week long. This recipe reheats really well.

Ingredients :

  • 8 eggs
  • 8 oz cooked ham (crumbled)
  • 1 cup red bell pepper (diced)
  • 1 cup onion (diced)
  • ¼ tsp salt
  • 1/8 tsp pepper
  • 2 tbs water

Directions :

Step 1: Preheat oven and prepare muffin cups

Preheat oven to 350F. Grease 8 muffin tins or line with paper liners.

Step 2: Beat eggs

In a large bowl beat 8 eggs with whisk or hand-held mixer until light and fluffy.

Step 3: Mix it altogether

Add crumbled ham, red bell pepper, onion, salt, pepper and water into the beaten egg batter.

Step 4: Pour and Bake

Pour evenly into the 8 muffin cups. Bake until muffins are set in the middle for 18-20 minutes.
