Lovely Beef Bolognese made Paleo friendly using nutritious eggplants and zucchinis. Certainly will fill you right up and be pleasing to any palette young or old. This recipe is fairly easy to make, and can be prepared in advanced and reheated to serve for lunch or dinner. Thanks to Daily Paleo Diet Cooking for sharing this tasty recipe. - Ground beef
- Eggplant (skinned and cubed)
- 6 small Zucchini (precut with Julienne peeler into thin strips)
- Tomato sauce (with basil and other herbs to taste)
- Fresh tomatoes (cut into slices)
- Fresh garlic (optional)
- Olive oil
- Salt & pepper (to taste)
Step 1: preheat the fry pan
Plug in your deep electric fry pan and preheat. Add quite a bit of olive to bottom of pan since the eggplant will soak it up. Keep an eye on this and if more is needed feel free to add more olive oil.
Step 2: cook eggplant
Once the fry pan is hot enough, add the cubed eggplant, you should hear it sizzle. If the olive oil is soaked up make sure to top it up. Stir the eggplant as it cooks. There is enough oil when the eggplant turns translucent and it stops soaking up the oil. Add a little salt and pepper now to taste and keep frying. You want to get a nice browning to the eggplant. Remove from the fry pan into a bowl and set aside.
Step 3: frying the ground beef
In the same deep fry pan, add the ground beef and break up into small pieces. Keep frying until cooked through and nice and brown. Add some salt, pepper and oregano (optional) to taste while browning. Feel free to add any additional herbs to your liking including some fresh garlic. Now you are ready to add the other ingredients.
Step 4: add remaining ingredients
Once ground beef is browned add the eggplant back in and give a stir. Turn fry pan down to a lower heat. Then add in the tomato slices and tomato paste. Give it all a good stir to mix through and then leave a few minutes on simmer, to allow for all the flavors to soak in nicely.
Step 5: making the zucchini noodles
Heat up the stove top and put oil into a frying pan. Once it’s hot enough add your zucchini strips and toss around for a bit in frying pan to cook evenly. Add in some salt and pepper to taste. This takes about 5-10 minutes, just enough time for our meat mixture to simmer.
Step 6: to serve
Place a heaping spoon of zucchini noodles onto one side of a plate. On the other side of plate add the beef eggplant Bolognese and serve up hot.
