Hearty Warm Paleo Beef Stew

When you are looking for something warm this Paleo beef stew recipe is sure to warm you up as well as keep you full. You can cook this meal ahead of time and simply refrigerate it. Then anytime you want just reheat and serve. This makes it the perfect recipe for days even when you don’t have a lot of time or for a lunch instead of dinner. This hearty Paleo beef stew recipe will serve at least 4 people and possibly even more if you add another side dish to go with it. As with any stew don’t be afraid to be lazy when cutting up ingredients. As long as they are edible sized chunks it really doesn’t matter the shape or looks of them. Ingredients

  • 500 g chuck beef
  • 1 onion (chopped)
  • 2-3 stalks of celery (chopped)
  • 2 carrots (chopped)
  • 2 sweet potatoes (chopped)
  • 3 tbsp tomato paste
  • 1/2 tsp rosemary
  • 1/2 tsp thyme
  • 4 cups water or beef stock
  • Salt & pepper (to taste)

Directions

Step 1: chop vegetables

Roughly chop the onion, celery, carrots and sweet potato; once done set aside.

Step 2: cut beef

Cut the beef into large cubes.

Step 3: browning the beef

In a large saucepan over medium heat add the beef and cook until browned.

Step 4: add vegetables

Once the beef is browned, add in the remaining veggie ingredients and cook for 3-5 minutes. Make sure you stir constantly.

Step 5: add paste, stock and spices

Now it’s time to add in the tomato paste, water or beef stock and spices. Bring to a simmer and then cover and cook for about 1 hour.

Step 6: remove lid and simmer some more

After about an hour, remove the lid, give the stew a stir and cook for another 45 minutes. This lets those spices set in nicely and makes your beef nice and tender. The stew mix will also thicken by this time.

Step 7: serve and enjoy

Now it is time to decide, shall you serve in bowls straight away and enjoy; or will you take this stew and refrigerate for later use? This stew is easily re-heated at a later time and can be served with another side dish to fill even more hungry mouths.

Here are some further cooking tips. Using low cost cut of beef such as the beef chuck means this stew will cost even less to make and the beef will be nice and tender since you will be cooking for quite some time. If this Paleo beef stew becomes a bit too thick simply add a bit more water to it. If you are finding it a bit runny then you need to cook it for longer. Make sure you don’t have the lid on it in the final stages or else it won’t thicken up properly. You can adjust the ingredients of this stew to your liking as stew is a fairly flexible dish to make; if you prefer more beef feel free to do add more or if you prefer other vegetables you can add them too.
