- 2 sweet potatoes
- Coconut oil
- Salt (to taste)
- Cinnamon (optional/to taste)
Step 1: prepare sweet potatoes
Wash and peel (this is optional since some prepare the skin on). Preheat oven to 375 F. Then with a sharp knife cut the potatoes about the thickness of a finger. Try to cut them all evenly in size or else the cook time will vary. Place the sliced sweet potato on a tin foil lined baking sheet.
Step 2: season
Spread out the sweet potato on the baking sheet and begin to season with spices you prefer. For this recipe we are using salt to taste and cinnamon sprinkled evenly on all the sliced potato.
Step 3: apply coconut oil
Drizzle melted coconut oil over the sweet potato fry slices until lightly coated. Use your hands to toss the fries in the seasoning spices and the coconut oil. Then once again spread fries evenly on your baking sheet and they are ready for the oven.
Step 4: baking the fries
Place the baking sheet with fries into a preheated oven of 375 F for approximately 20-35 minutes or until almost tender. Pierce with a fork to check for tenderness. Times will vary depending upon the thickness of your slices. Once the fries are almost tender, increase your oven temperature to 425-450 F for about another 8 minutes to increase the crispness of these fries and give them more of a French fry texture.
Step 5: cooling and serving
Once the fries are completely tender and crisp, remove the baking sheet from the oven and allow to cool for another 5-10 minutes before serving which will also allow them to crisp up a little more. Serve with one or two of your favorite dipping sauces; either as a standalone snack or a great side dish to another meal.
