Paleo Meyer Lemon Muffins

Today we are making another paleo recipe called the meyer lemon muffins. It’s a cross between a lemon and an orange flavor. Although there isn’t a strong acid taste from this muffins but you could still taste a mild taste of lemon from it. It’s very easy to make with less than 7-8 ingredients all combined. The ingredients are very easy to get as we come across it everyday.


  • Grass-fed butter/coconut oil
  • Baking soda
  • 2 tbsp. Honey
  • 3 eggs
  • 2 meyer lemons
  • Coconut milk
  • Pinch of sea salt
  • Coconut flour

Step 1: crack the eggs into a bowl and whisk thoroughly. Add the coconut milk, melted butter and honey into the bowl containing the eggs.

Step 2: add the squeezed out juice from the meyer lemons into the bowl. Be careful not to let the seeds into the bowl alongside the juice. In a situation where meyer lemons are scarce to find, you could use the juice gotten from half an orange and a lemon to get the indifferent taste.

Step 3: whisk the entire wet ingredients properly before adding the dry ingredients, i.e, the sea salt, baking soda and the coconut flour. Stir and leave for few minutes until it’s thick.

Step 4: pour your thick batter into a muffin cup and fill it to the brim. Preheat the oven to about 375°F and place the muffin cup into the oven. Leave it to cook until it’s golden and solidified.

You could try out the muffins with some fresh blueberries or with any other food you may wish to try it with. Enjoy!
