Perfect for a post-morning workout or a cuddly morning on the couch, this paleo mug cake comes together in minutes. Chocolate chips and espresso combine to add a wonderful flavor, and coconut flour and eggs add a solid punch of protein and fiber.
Here it is:
Serves: 2 mug cakes
- 6 tbsp. Chocolate chips
- 2 tbsp. Olive oil
- 4 tbsp. Coconut flour
- ¼ tspn. Baking soda
- 2 tbsp. Espresso or water
- 2 eggs
- Coffee extract
Step 1: Add 3 tbsp chocolate chips and 2 tbsp olive oil per mug. Stir properly till it’s melted.
Step 2: Add the 2 tbsp. Coconut flour and the baking soda per mug. Also add the water or espresso, the egg and coffee extract.
Step 3: Place the mug in a microwave and heat until the mixture in the mug rises to the top for about 1½ minutes. Allow to cool for 2 minutes before eating.
