Today, we are going to be taking you through another wonderful muffin recipe. Pumpkin pie muffins are delicious muffins that are both nutritious and too easy to make. They contain excellent ingredients that provide healthy values to the body, such as the balancing of blood sugar levels thus being sugar free.
Yields: 5 muffins
- 3 eggs
- 2 tbsp. Honey
- ½ cup coconut flour
- ½ cup pumpkin purée
- 1 tbsp. pumpkin spice
- ½ cup melted butter or olive oil
- ¼ tspn. Baking soda
- ¼ tspn. Salt
Step 1: Break your eggs and pour in a bowl. Add the pumpkin purée, melted butter or olive oil and honey into the bowl containing the eggs. Beat and mix until you get a smooth and even mixture.
Step 2: Add all dry ingredients (coconut flour,pumpkin pie spice,baking soda and salt) into the mixture in the bowl. Mix again to get an even mixture.
Step 3: Pour mixture into several muffin cups till it’s full to the brim.
Step 4: Place in a preheated oven of about 375°F and wait till it turns brown.
Serve hot !.
Muffins are delicious. The honey added to the list of ingredients gives it this sweet but natural taste in place of sugar.
