Satisfying Two-Egg Paleo Breakfast Omelette

A great go to Paleo breakfast omelette is the perfect way to start the day. It is very easy dish to quickly whip together when there is a lack of time in the mornings. Using any type of leftover or frozen root vegetables makes this recipe a quick and easy nutritious way to start your day. It tastes great; it’s filling and also good for you. Ingredients

  • 1/2 to 1 cup leftover or frozen root vegetables
  • 2 eggs
  • Meat of choice (either leftover chicken, some natural deli meats)
  • Garlic chives
  • Pepper & salt (to taste)
  • Coconut oil

Directions

Step 1: cook vegetables

Take a frying pan and add about 1 tsp of coconut oil and heat up over medium heat. Then add your vegetable leftovers to the frying pan in order to crisp them up a bit. Should only take about 1 minute per side to crisp veggies. In this recipe there are carrots, sweet potato, red onion, sweet bell pepper; feel free to change these vegetables to anything else you prefer.

Step 2: prepare eggs for omelette

Take a bowl and crack open 2 eggs; add salt and pepper to taste (optional you can add in some coconut milk which will make them creamier). Beat egg mixture with a fork until thoroughly mixed. Set aside until the vegetables have their crispness. Then remove vegetables to a plate to be used as a side dish for your omelette breakfast. Alternatively you could mix the vegetables right into your omelette as well.

Step 3: cooking the egg omelette

Using the same frying pan turn the heat down to a medium low and add another teaspoon of coconut oil. Swirl the oil in pan to cover the bottom then add in the egg mixture. Let the eggs cook for about 30 seconds before taking a rubber spatula and running it along the edges to loosen up the sides from your pan since you don’t want the edges to become all crispy without cooking the rest of your eggs. Once eggs become fairly cooked it is time to flip them over in the pan.

Step 4: add meat to omelette

Once the egg omelette is flipped over it is time to add in your choice of meat. Leave for a few seconds, long enough to warm up the meat and then fold over your eggs into an omelette.

Step 5: serving

Taking the plate with the side dish of root vegetables, remove the omelette from the frying pan and place beside the veggies. Take the garlic chives and cut them into small pieces using scissors for herbs or a sharp knife, then sprinkle them on top of the omelette. Now you are ready to serve! Eat and enjoy!
