Scrumptious Sweet Potato Pancakes

Sweet potatoes are truly a nutritional powerhouse, loaded with vitamins A and C, beta carotene and fiber. They can be enjoyed in so many different ways. One of the most delicious ways of course is to have them at breakfast as pancakes. They are a perfect fall treat since this is the time of year they are in season. This recipe is very easy to make and you can even prepare the sweet potatoes ahead of time by cooking them and putting a batch in your fridge to use later.   • 1/2 sweet potato (diced into cubes)
  • 1 egg
  • Vanilla extract
  • 1 tbsp coconut flour
  • Coconut oil


Step 1: prepare sweet potato


Wash and peel your sweet potato and dice into smaller cubes.

Step 2: cook sweet potato


Boil some water in a pot, just enough to cover the sweet potato. Once the water has come to a boil, add the sweet potato and cover the pot and continue with boiling. Check the sweet potato cubes with a fork for tenderness in about 8 minutes.

Step 3: prepare sweet potato


Once the cubes are tender and can easily be pierced with a fork, drain the water and put cubes in a bowl and begin mashing them with a fork.

Step 4: add remaining ingredients


Once completely mashed go ahead and add your egg, vanilla extract and coconut flour. Blend ingredients thoroughly using a fork until the mixture looks like a semi firm dough.

Step 5: baking pancakes


In a skillet place some coconut oil for frying and preheat the fry pan. Once heated; place a heaping spoonful of the pancake mix into the skillet. Shape into a round pancake and let cook for about 3 minutes. At this time flip over to the other side and cook again for another 3 minutes or until both sides are nice and brown.

Step 6: serve


Once the sweet potato pancakes are fully browned and removed from the skillet, place them on a plate. You can eat them just as they are, or grab and go on your way to work or school, or feel free to use your favorite toppings. Perhaps you might try some homemade jam or a little honey with them.
