No time in the mornings to make a healthy breakfast because you are always rushing out the door? Why not prepare this low carb, low cal, Paleo breakfast muffin recipe ahead of time. It’s quick and easy recipe and makes 12 muffins. Then simply grab and reheat to enjoy. This delicious recipe is brought to you by Kelly Augustine.
- 10 eggs
- Various vegetables (diced) (mushrooms, peppers, broccoli, kale, spinach)
- Lean meat (eg ground turkey or turkey bacon)
- 1 tsp fresh garlic (finely chopped)
- 1 tsp salt/pepper mixed
- Grated cheese (optional)
Step 1: Prepare eggs
Crack and scramble eggs with fork.
Step 2: Add your favorite ingredients
Add vegetables, meat, garlic, salt and pepper. All ingredients should be chopped up into small pieces.
Some ingredients you may wish to experiment with are kale, broccoli, red and green bell peppers, onions, spinach, mushrooms, chicken or turkey bacon, ground meat, and ham. You may wish to precook any of your meats just lightly before adding to the mixture.
Step 3: Ready for the oven
Using a ladle, spoon into non-stick muffin pan (optional use paper muffin liners). Bake for 18-20 minutes until firm in the centre.
Step 4: Ready to eat
Let cool. Refrigerate or freeze for use all week long. Reheat or eat cool.
