Rise and shine to the smell of sweet potato stuffed with bacon and egg. Oh so yummy and good for you too. Gone are the days of only eating oatmeal or egg whites. What a great way to start the day the Paleo way! Thanks to Fit Men Cook for providing this creative breakfast recipe. It’s a great option for those days when you have a few extra moments in the morning or for a brunch serving with family and friends. An alternative to using the ingredients below would be to create a stuffed avocado with egg and turkey bacon. Mix up any toppings from mild to spicy and instantly change the mood of this flavorful dish. Let’s start cooking.
Ingredients for 2 servings
- 1 medium sweet potato
- 2 eggs
- 2 slices turkey bacon
- Fresh rosemary
- Pepper & salt (to taste)
Step 1: bake sweet potatoes
Preheat the oven to 400 F. Bake the sweet potatoes for about 45 minutes until they are soft yet still firm. If they are too soft you cannot use them to stuff with other ingredients, as it will not hold them and fall over instead.
Step 2: prepare the potatoes for stuffing
Slice the sweet potatoes in half and carve out the center in order to make a hole large enough for the egg. Remember to leave a little lip around the edge of the potato in order to remain firm for serving.
Step 3: layer inside of the potato
Use a slice of turkey bacon to wrap around the inside of the sweet potato. This will become the base. It may be easier if you slice the bacon into smaller pieces and layer until the inside is all wrapped.
Step 4: add the egg
Crack an egg into each sweet potato boat. If you are concerned with over or under cooking the egg yolk you can separate them in a bowl first and add only the egg white to the sweet potato. Then once the egg white is about 90% cooked remove from the oven and add your egg yolk and finish baking to the desired consistency of your yolk.
Step 5: bake in oven
Place the stuffed sweet potatoes (with or without the yolks) onto a baking sheet and put in the oven for about 25 minutes or until your egg white is cooked. (Follow instructions above for cooking egg yolk separately)
Step 6: serving
Place the stuffed sweet potato on a plate and season to taste and garnish with optional ingredients like fresh parsley, rosemary, salt and pepper or oregano. Serve and enjoy immediately while still warm.
