Thai food is amongst some of the most nutritious in the world. The health benefits of not only the ingredients used, but the method in which they are prepared mean that they are rich in many of the vitamins and minerals we need to make an impact on the overall health of the body and it’s well-being.
Here it is:
Serves: 1 medium bowl of soup
- 1 Butternut squash
- ½ clove onion
- 1 tbsp. Curry paste
- Chicken stock
- 1 tbsp. Fish sauce
- Coconut milk
Step 1: Chop up the butternut squash and place the tiny bits. Fry some onion and curry paste and add some butternut squash to the skillet. Stir properly.
Step 2: Add the chicken stock until the butternut squash is submerged with the stock. Add a little fish sauce and pepper to the stock. Now add your coconut milk and let it simmer for some minutes.
Step 3: For those who want a more liquid form for the soup with no visible butternut squash, you could pour the soup into a food processor and blend(this is totally optional)
Now you have a creamy and delicious soup. Enjoy !
