Zucchinis are healthy fruits that possess an amazing antitoxin value. It is rich in vitamin A and vitamin C . It’s also rich in minerals such as iron and zinc. Imagine having to create pasta from zucchinis, this rich fruit has the ability of transforming your pasta into a beautiful green meal.
- 1 cup toasted almonds or pine nuts
- 2 lemons
- 3-4 cloves of garlic
- 5 cups basil and spinach mixture
- 2 tbsp. olive oil
Step 1: toast out your almonds in your skillet for some minutes, then allow it to cool down.
Step 2: place your zucchini into a spirallizer and create spaghetti-like strings for the pasta.
Step 3: add 1 cup of toasted almonds into a food processor. Also add the garlic,salt,pepper,basil and spinach mixture. After processing, add two dollops of vegan mayonnaise including squeezed out lemon juice and olive oil.
Step 4: add the processed mixture and mix it with the zucchini pasta in a bowl. Continue coating till its thinly coated over the zucchini pasta.
Step 5: squeeze some lemon juice over the zucchini pasta and garnish with some pepper flakes and a small spinach leaf on top.
